Hello everyone! Did you have a great weekend??? Our family has been spending some time away at the Beach House, but now we really need to get back into the swing of things! I also had a great time with some girlfriends at the Dare To Be women’s conference this last weekend, and let me tell you, it was a powerful and challenging evening! If you are near ANY of the cities listed below, JUST GO! Natalie Grant, Charlotte Gambill and the entire team were SO inspiring.

Ok, so onto today’s post topic! If you’ve been following me on Instagram, you’ve seen lots of foodie posts to {hopefully} be encouraging as many of us are more focused on our health these beginning months of the year. I usually have at least one salad a day as part our family’s food intake and this is just a snippet of some of the salads we enjoy. I’d love to know your fave recipes!
{Modified} Cobb Salad
Spinach, Romaine, Tomatoes, Chopped Celery, Water Chestnuts, Sliced Hard-Boiled Egg, Hempler’s Bacon {chopped}, Tillamook Smoked Black Pepper White Cheddar Cheese {cubed}, homemade dressing
3 tablespoons red-wine vinegar
1 tablespoon fresh lemon juice
2 teaspoons Dijon mustard
1 small garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon sugar
1/4 teaspoon black pepper
1/2 cup extra-virgin olive oil

No Lettuce Salad
Who needs lettuce???
Just throw together some carrots, tomatoes, celery, cucumbers and leftover grilled chicken with a healthy fat dressing and you have yourself a yummy “salad”.
Green Salad with Avocado
Here is a more “standard” salad with Romaine, Tomatoes, Carrots, Cucumber, and Avocado with a light balsamic dressing and sliced orange bell peppers on the side.
Kale Salad
Oh my….this picture is quite awful and does NOT do this salad justice. We love this salad SO much we currently are eating it about 3+ times per week. We love, love LOVE it! Kale is an awesome source of Calcium, Vitamin A, Vitamin C, and Vitamin K. Seriously, I’m *this* close to actually vlogging about it because it’s so awesome. People…our kids usually ask for seconds. Really??? Really.
It consists of Green Kale, Lemon Juice, Lemon Zest, Purple Onion, Peppadews, Garlic Salt, Cracked Pepper, Olive Oil and Grated Asiago Cheese. Yum, yum, yummy.
Salmon Salad
Simple Salmon Salad with leftover Grilled Salmon, Romaine, Tomatoes, Celery and balsamic dressing.
